Oh, cookout season, how I love you. I do enjoy a good grilled cheeseburger or hot dog…but I live for the side dishes. Especially at a potluck (which cookouts often are), when everybody brings a favorite dish and you end up with a smorgasbord full of the best-of-the-best summer food. Pair that with beautiful weather, good friends, and good conversation, and it doesn’t get much better!
Okay, let’s talk summer sides. Of course, there are your classic cookout side dishes: baked beans, corn on the cob, macaroni and cheese, deviled eggs, etc. And then, you’ve got your cookout side dish “salad” line up: fruit salad, pasta salad, macaroni salad, potato salad, and coleslaw. If you’re in the mood to jazz it up a little bit, you could put a creative spin on a classic with a loaded baked potato version of potato salad or a garden-fresh caprese pasta salad.
